Seafood Chowder with Bacon and Corn

This delicious soup is a good idea for dinner or lunch in cold weather. Also it's a good way to convince children to eat fish by disguising it with other seafood that they prefer more. A while ago I cooked a chowder using the following recipe  http://notwithoutsalt.com/chanterelle-chowder-with-bacon-and-corn/ , however I couldn't find raw chanterelle mushrooms here in Sydney and therefore used normal mushrooms instead. It was also very tasty, but I thought to cook seafood this way as well. So I had to modify the original recipe to adapt for seafood instead of mushrooms. Here's how it looks. Seafood Chowder with Bacon and Corn Serves 4 for two days or 7-8 people one off Ingredients: 250 grams diced bacon 1 onion, diced 1/2 large bulb fennel, diced 4 garlic cloves, sliced 1 tablespoon miso paste 4 cups prawn or fish stock 2 cups cubed yellow potatoes (3 medium/large) 1 can corn kernels 1 1/2 cup pure cream mixed raw seafood about 700-900 grams (I us...

Haute Cuisine, Fine Dining, Steaks, Dumplings, Quality and Other Matters

Today had an intense conversation at lunch regarding the food. No, The Food. Discussion evolved around experience with very expensive restaurants that use some famous brand names, but the food is not so good. Some people say it is "experience" that people pay money for. Then the experience should make food better for money. As an example there were some stories: 4 (four) dumplings for $60 that were made in front of you, $45 stake which is shit, $600 bill for 5 (five) people dinner after which they went to nearest McDonalds to eat, because they were still hungry. There is an opinion that it's better to cook for yourself - get the best meat (if we are talking about stake) from the shop, get the grill - there you go. But then some people say that then maybe chefs will do IT too? This supposed to mean that IT skills are the same as cooking skills. Quite possibly if the cooking skills were not just something basic that everybody can do. But then again there are peop...

Wine - Speri Valpolicella La Roverina 2011 Classico Superiore

This one is the first Italian wine I have ever tasted. The blend is 70% Corvina, 20% Rondinella and 10% mixed of Molinara and other autochthonous varieties, aged 10 months in large oak barrels. Very good stuff. Delicate taste with fruits, oak and dark berries in it. Worked very well with beef and duck. My other wine posts

Wine - George Wyndham Shiraz Grenache 2012

Dark berries, citrus, spices, hints of chocolate, leather. Like the shiraz+grenache mix. I think grenache adds sweetness to it. Really enjoyed this one. Bought @ http://danmurphys.com.au/

Wine - Georges Duboeuf Beaujolais-Villages 2011

Pretty nice wine. Light and citric, some spice.

Wine - 2012 Shiraz Special Reserve 195

Bought this wine from Liqourland  for $6 with an intent to use in cooking. Used 150ml in preparing Pave de boeuf with Roquefort sauce and gratin dauphinoise  and then drank the rest. Good wine in regard to price-value ratio. Dark berries, alcoholic, citrus.

Chinatown in #Sydney

The best place in #Sydney for a variety of food for reasonable price - Chinatown. Also a good indication of what language other than English has to be learnt.
